The most dramatic arrival in Los Cabos belongs to this resort: a private lamplit tunnel bored straight through the Pedregal headland, opening onto a terraced hillside that tumbles down to the Pacific at the very tip of Cabo San Lucas. Formerly The Resort at Pedregal, it joined the Waldorf Astoria portfolio in 2019, and its roughly 115 rooms and suites are stacked into the cliff so that every one has a private plunge pool and an unbroken ocean view. This is the town side of Cabo, walking distance from the marina, not the distant corridor.
The signature is El Farallon, a seafood restaurant carved into the rock face above the crashing surf, where you choose your fish from the day’s catch and start with a drink on the Champagne Terrace overlooking the waves. Don Manuel’s covers refined Mexican cooking, and the spa terraces into the hillside with hydrotherapy and a long treatment menu. The Pacific here is powerful and not for casual swimming, so the resort’s pools and your private plunge pool do the heavy lifting, with whale-watching off the rocks in winter.
Book it for privacy, drama and sunsets rather than a swimmable beach. Service is genuinely excellent and the setting, poised between desert and ocean, is among the best in Baja. It is expensive and adults tend to outnumber children, though families are well looked after. For a special-occasion Cabo stay with the town on your doorstep, it is our first choice.
